Instant Blueberry Jam

This is one of those recipes that made me go "wow, really?!!"

The killer combination of superfoods + instant = how-come-I-never-knew-about-this-before kinda feeling, you know what I mean? :)

Once I learnt about it and did a brief google, I realised the recipe has been around for a while, especially on those healthy-eating type of websites.

It's so easy it's unbelieveable.  Fresh blueberries, blend em up, mix with the sweetener of your choice, and chia seeds.  Yup - that tadpoley-lookalike superfood acts as a thickener that makes the mush berries into a gell-like consistency.  Exactly like jam.  No cooking required.  Takes 5 minutes of prep, two hours in the fridge.  And the jam is ready.

Don't ya just love it.  You can substitute the blueberries with other type of berries such as strawberries, mulberries, raspberries etc.   Thanks to my cell group friend who shared this recipe with me, this is now my go-to recipe for instant, nutrients-packed homemade berries jam.


Instant Blueberry Jam

Makes about 500ml 
  • 125g fresh blueberries
  • 2-3 tsp organic muscovado sugar (or honey)
  • 3 tsp organic chia seeds
Method
  1. Blend the berries and sugar together
  2. Pour out into a glass container and stir in chia seeds.
  3. Cover and refrigerate for at least 2 hours until it thickens into a jam-like texture.

Best consumed within 2 weeks.

Refrain from stirring and breaking up the texture as it will turn slightly liquidy.


This is the texture after 2 hours in the fridge.  It will remain jelly-like
as long as you don't stir it and break up the texture.
