You'll never go wrong with eggs and ham in a salad. To amp up the nutritional value, add in some quinoa (pronounced “keen-nwah”).
This superfood is packed with protein, fiber, magnesium and iron. It is also gluten-free and is easily digestable. Quinoa imparts a lovely nutty flavour to the dish, much like how sesame seeds/oil lifts up a meal. You can find quinoa in the
organic section of most supermarkets and grocery stores.

Ham and Quinoa Salad with Sesame Vinaigrette
- 3 tbspn uncooked quinoa
- 3 hard boiled eggs
- 3 slices of ham (I like to use German Ham)
- 1 small broccoli floret
For the vinaigrette
- 1 tsp sesame oil
- 2 tsp vinegar
- 2 tsp sugar
- 2 tsp light soy sauce
- 1 tsp lemon juice
- Dash of white pepper
Method

- Rince the raw quinoa and put into a saucepan with ¾ cup water. Bring to a boil and simmer for 10min until cooked. Let it cool.
- Cut the eggs into quarters and dice the ham.
- Cut the brocoli into small bite-size florets and zap them in the microwave for 2 minutes until just cooked. Let it cool.
- To make the vinaigrette, mix all the seasonings in a bowl and season with pepper.
- Assemble all the ingredients and pour the dressing on top. Serve immediately.
