Back to Basics Part II - Post #2: Easy Stir Fry Tomato Prawns

This dish is kid friendly and very appetizing.  I would love to add some sweet thai chili sauce to give it a spicy kick but omitted since my son will also be eating this.

Takes no more than 10 min prep time and 5 min cooking time. 


 Easy Stir Fry Tomato Prawns

  • 250g large tiger prawns
  • 1 egg
  • 3 pips garlic, minced
  • 3 tbspn tomato ketchup
  • 1 tsp sugar
  • Dash of soy sauce and white pepper

1.  Trim the prawns of the feelers, legs and snip off the first half of the head.  Rinse and set aside.

2.  Heat 1 tbspn of oil and fry the garlic until golden.  Drain the prawns of any excess liquid and pour into the pan.  Spread it evenly in the pan and let it cook on each side for about 3 min until just cooked.

3.  Push the prawns to the side of the pan and crack the egg.  Add in all the seasonings and stir the egg briskly into a scramble egg texture, finally coating the prawns with the egg and sauce.  Serve immediately with hot steam rice.
