Back-to-Basics II: Post #3 - French Toast, Mum's style

During our schooling days, my mum used to make these delicious french toast for our breakfast. 

To me these were real treats, to make up for those crack-of-dawn hours that we had to wake up to take the school bus.  I remembered the house would be filled with the wonderful aroma of these breakfast treat. 

Mum made them the sweet-eggy style, and if you grew up eating mum's style, that's the style you like even as an adult.  So here's my mum's version of French Toast. Sweet and Eggy. 




French Toast - Mum's style

  • 4 pieces of bread - overnight fridge bread is fine, as long as it is still reasonably fresh. 
  • 1 large egg
  • 1.5 heap tbspn of castor sugar or 2 tbspn of brown sugar
  • 2 tbspn of milk

I also like to use homemade fruit bread -
in this case it's sultana and cranberry fruit bread


1.  Crack the egg in a deep bowl, add the sugar and milk and beat until evenly mixed.  

2.  Heat a generous dollop of butter on a pan (Use one dollop of butter per each piece of bread) and swirl it around the pan.  Dip a piece of bread onto the egg mixture and gently fry until lightly browned.  This will only take about 2min.  Flip onto the other side and fy again.  Set aside on a serving plate.  Repeat with the remaining pieces of bread.

This is already good on its own.  I usually just serve it with a glass of cold milk or milo for breakfast.

  1. Esther, this brings back my childhood memories. I would eat with a sprinkling of sugar and it was something to look forwards to. Must make some one of these days.

  3. Hi Esther, this is the way my mum made french toast for us too, except sugar is sprinkled on the bread when it is ready instead of added into the egg mixture. And yes, I am still doing it mum's way :) Oh, and i think this is what i will do with the last 3 pieces of corn bread that i have for tomorrow's breakfast, thanks for timely inspiration!

    I made some of these few days ago.
    Trying to share with my kids what my mum use to make for me. Oh yes, I love to use fruit bread too sometimes.
