Banana Sorbet - Can't Get Any Simpler Than This





This is truly a one ingredient recipe, believe it or not. 






What more can be purer than pure blended frozen fruit.  Seriously, good things do not come any simpler than this (except my son's hugs and kisses) :)

This has been described as an icecream, but I like to think of it as a true blue sorbet, with no other ingredient than the fruit itself. 


I shaved some dark chocolate onto the sorbet more for garnishing
purposes, but it added a nice mellow cocoa flavour to the taste


Banana Sorbet
Adapted from Matt Preston, Masterchef (Australia)

  • 6 ripened bananas, skin on (preferably the short sweet ones called pisang emas)

1. Freeze the bananas for at least a day or two. 

2. Shave off the skin with a knife, cut into chunks and blend/blitz with a little water until it becomes a creamy, frozen consistency.

3.  Re-freeze for about 2 hours before serving.


To get the best creamy texture, blend until you can see
this pattern in your mixture. 


Love the cinemascope effect!

I love this so much that a few days later I bought a huge pile of bananas to make the next batch of sorbet!

Tip: Bananas give a creamy texture when blended, that's why it's added to many fruit sorbet (especially berries types) to give that creamy texture.

  3. I've done mango sorbet before but not banana, and I have frozen bananas in the freezer now, so I am so going to do this. Thanks for sharing - not many one-ingredient foods in this world of processed food.

  5. Whoa, Esther! I was planning on buying bananas this weekend to make muffins. Guess there will be a change of plans! Can we peel off the skin first and then freeze?

    1. Yes you can. I didnt do it because i am not sure if that would make the flesh turns dark, which might not look so nice for presentation purposes. Do try it and let me know if it works. I hv seen some other bloggers who even slice the bananas first. Thinking well ahead!!

    2. hi esther and phong hong, i tried this sometime ago and i peeled off the skin first, i was also afraid that they may turn black that's why i chose not overripe bananas. I also cut them into slices first, actually it's not necessary to cut them first, just i think it may be little hard to slice them later after freezing. esther, i really love your pictures!! looks so enticing!!

  6. Esther, love the chocolate shavings!! Yes this is so good, isn't it? And the type of bananas you are using is perfect for this recipe. Sweeter than those large ones. You really froze all those bananas, looks like 20 of them to me!! You must have this huge tub of ice cream sitting in the freezer.

    1. Hahaha Mich, i havent make that big batch yet, gonna use it for a little dinner party i am hosting soon, so freeze them in advance.

  8. I want to give this a try with regular bananas we have... probably it won't be as good as yours but at least I'm in love with SUPER EASY method. Looks yummy and my kids will adore this.... :)

  9. Yes this definitely is a winner in the kid friendly category of desserts! As long as you use fully ripened bananas it should work out fine. Can also top with some chocolate fudge sauce to make it truly indulgent!

  10. This would be the world's simplest recipe. I love sorbet and how wonderful it is to turn banana into creamy sorbet! I am going to remember this when I get a bunch of banana going overripe.
