This recipe was originally called Meatballs Nirvana, sourced from Allrecipes. Well, it didn't quite send me into nirvana (thankfully!) but these are very yummy nonetheless.
My son got back from school as i was baking these in the oven, and he came over and said "Mmmmmm! What is the yummy smell, Mum?"
Even my hubby popped his head into the kitchen and gave me that raised eyebrow look that says "What ARE you cooking?"
The recipe is very straightforward. I switched the ground beef with lamb mince, made some adjustments to the flavour and reduced the salt level (the original recipe was very salty). Made some extra and pan fry as burger patties. I have also used these with some marinara sauce for a pasta meal and as finger food with my homemade yogurt cream cheese with herbs dip.
Herb Lamb Meatballs with Yogurt Dip
Source: Allrecipes, with some modifications
- 600g mince lamb (this can be substituted with chicken, pork or beef)
- 2 fat pips of garlic, peeled
- 1 tsp mix herbs
- 3 sprigs of parsley / rosemary / thyme (or a mixture of them)
- 1 medium size onion, sliced
- 1/2 cup breadcrumbs (store-bought or homemade)
- 1/2 cup skim milk
- 1/4 cup grated parmesan
- 1/2 tsp salt
- Loads of freshly cracked black pepper
- 1 tblspn of Maggi seasoning sauce or Worchestershire sauce
1. Line a ovenproof pan with aluminium foil and spray / brush the base with cooking oil. Preheat the oven to 170 degrees celcius.
2. Put the garlic, onion and all the herbs into a blender and blend until becomes a fine paste.
3. Mix the paste with the rest of the ingredients and shape into sizes slightly larger than the normal fish balls.
4. Arrange the meatballs in the pan and spray or brush with some cooking oil. Put into the oven and bake for about 20 min until golden brown and cooked through.
