I used to tell my friends that cooking is therapeutic for me. That was when I was working full time (I mean overtime) in the corporate world. Those were the days of takeaways, midnight OTs and guilty mama-MIA-wife all-in-one syndrome. On rare weekends when I could find the time and energy to cook, it was always refreshingly therapeutic because I could then "work my hands and free my mind" so to speak.

In mid 2010 I decided to hang up my "power suits" and jump onto the SAHM bandwagon.  As I started to cook on a more regular basis - mostly on weekdays, I began to appreciate the need for more simplified recipes and yet having a variety of dishes on the family menu.  I experimented with various cooking methods to find short cuts and bought into a mini arsenal of different cookware in my quest to simplify the recipes of foods that I enjoy eating in restaurants, yet have always found to be intimidating for home cooking. 

I like what Irish chef Conrad Gallagher wrote in one of his cookbooks entitled 3 Step Cooking, "....if you are cooking at home for family and friends, ...you should aim to spend more time eating the food than you do cooking it, or washing up afterwards...food can be sophisticated yet simple, meals can be classy, without being a chore to prepare".  A wise and practical philosophy.  I couldn't agree more.

In a nutshell, the aim of this blog is simple - to catalogue the recipes that I have tried (so that I can remember what I have cooked or baked before), and to share them with those who are interested.  Perhaps in a different season of my life, I might start another cooking blog entitled "Lovingly Laborious" (!), but for now, the mantra is "Easy and Tasty".  The food I cook is usually easy to prepare, do not take a long time to cook, and washing is kept to a minimum.  I hope you will enjoy reading my posts, and feel free to post your comments.   3. Good mantra. I love easy to prepare food and most of all I like those with less washing up. I am a LAZY cook.

  6. Hi Esther, wow! your blog is so new and yet so many delicious recipes posted already! I love easy to prepare meals too although I seldom cook, more into baking than cooking, that's me! Maybe I should get some ideas from your blog to cook more often! :)

Oops...solly...me so blur I never connected Fuss Free Chef with a young talented mother with gifted hands and fingers, who could not only touch the hearts of many through the scales of music but also, hits the likes of many born-again connoisseurs (like me?)....and merely through posted pics and salivating phrases. What else can you not do? In my books, Ms Chong...you're a hero be it on the keyboards, the chopping boards, and (I'm sure)...the whyteboards as well! Go on...bring the world to its knees! Hoot...hoot!
